A Weekend of Epic Insanity

Holy crap.  I am going to need a long time of serious recovery from this weekend and won't be able to get it.  Work is quite a struggle today.  Torn on how much of my weekend is really internet-friendly information.  Went karaoking with some awesome people and sang a wide variety of fun songs.  "Wheel in the Sky", "I Wanna Come Over" "That's the Way it is" "Sweet Child O' Mine" and "Part of Your World."  I love karaoke at Casey Morans.  Great selection and a good crowd. 
The rest of the weekend was just pretty awesome.

Food for the weekend was something I did rather well actually. 

Friday:

7:45 a.m. - coffee and creamer

12:00 p.m. - Chicken wrap in a low carb tortilla with avocado, half a slice of swiss, roasted red pepper hummas and lettuce.  Cottage cheese on the side.

3:00 p.m.- apple

5 p.m. - peanut butter

8 p.m. - chicken breast just straight while I was getting ready

Lots of vodka soda

Saturday:

8 a.m. - coffee and creamer
5 p.m. - Black bean soup and half a chicken salad sandwich from Panera (not low carb but I needed sustenence).  Whole grain baguette.

lots of vodka.  a bite of pizza late night.  I managed to avoid free sliders in the bar... amazing.

Sunday:

11:00 a.m. - Ham and swiss baked eggs with a slice of wheat toast

1p.m. - Skim latte

3-10 p.m. - Three bloody marys and who knows how many beers.  Some celery off the plate of a friend who was eating wings.  Did I eat dinner?  I honestly don't remember.  Oh yeah!  haha

11 p.m. - Broccoli and Cauliflower - I picked out all of the carrots in a frozen bag of mixed vegetables because I hate carrots.

So so ridiculous.  Waking up today was a joke and all of the mess that is my condo is still waiting for me.  They are anticipating a crazy intense snow storm and I'm really hoping for a snow day or two :)  Would be glorious. 

I am down 8 lbs as of now.  17 more to go.

An Interesting Night

Ya know, last night was just weird.  Obviously the internet is not a safe space so this blog generally has to stick to totally kosher topics that I don't mind the world seeing.  Not a totally safe "strangers and best friends" only sort of space. I'll leave it at weird. 

Work was a bit stressful because we had a "learning walk" which is when people from the network come around and observe our every move.  During my 3rd hour class, a total of 7 people observed me and that is enough to stress out anyone, let alone a teacher trying to get 25 students organized to do research on laptops and being judged for every single thing in your room from having student work up, to an organized and thorough planning binder using all of the right templates,to proper objectives being written, to explicit instructions and assessment for students, classroom management and a whole bevy of other delights.  My coteacher once compared our school to having a garage with an amazing set of tools.  Almost every tool you could ever dream to have would be in this garage.  Now the only issue is that every time you want to do something using the tools, you have to use every single tool in the garage, no matter how inconvenient or ineffective it might be.  Only my school doesn't actually have every tool available.  We don't have a library and we only have 23 working computers available to do student research that take more time starting up than you generally have in a class period.  By tools, we have a lot of paperwork.  OK, work vent session over.

I was denied at the tanning salon because it had not been a complete 24 hours since my last tan (I was short one hour) so that was rather disappointing.  Went home and had some leftovers, finally put my laundry away.  Had a ridiculous conversation with a ridiculous friend and watched some predominantly mindless television. 

American Idol update: For anyone watching this season so far, first of all I really like the positive adjustments.  Though I loved Simon, the show just has a lot more energy at this point and the contestants seem way better.  Still makes me wish I'd auditioned at some point and now I'm almost too old.  Damn it. 

In any case, Wednesday night the last contestant they showed was Chris Medina, a talented young man whose beautiful fiance was in a tragic accident, leaving her nearly brain dead.  She is in a very long road to recovery and is starting to be able to get back basic movement and speech capacity.  Chris stands by her side lovingly, refusing to abandon her so it was wonderful to see the reaction the judges and viewers had to his story and voice.  The couple happen to be good friends with many of my friends from Starbucks and you may have noticed that his proposal took place in a Starbucks.  It's that whole Starbucks family connection so keep Chris and Juliana in your thoughts through the remainder of this season... they could sure use some good news.

6:30 a.m. - coffee and creamer

11:00 a.m. - Turkey wrap on low carb tortilla  with low fat cottage cheese

3:30 p.m. - banana

5:30 p.m. - peanut butter - this is probably a habit I really should stop although I am losing weight... at a slower rate than would be ideal. 

7 p.m. - leftover cranberry glazed pork and cauliflower mashed potatoes.

That's all.  Back to work now I suppose.

Cauliflower Mashed "Potatoes" Delight

I feel like I had something I wanted to discuss in this post but I have totally forgotten whatever it was.  I've been really productive today which is unlike me.  Work went rather well but was exhausting (I use that word a lot.  I'm like an old person or something.  It really is just insane how tiring it gets trying to keep a bunch of 18 year olds in line all day... especially when you are trying to get them working lap tops to do research on).  Had to stay pretty late to get the newspaper finished... you know that extra thing that takes up so much of my life but that I don't get paid for.  It wasn't my students' best work either which is disappointing.

So after work I did something that is probably stupid on a few levels but I'm not regretting it at all.  I went tanning. Stupid cause of well, the cancer thing and also the fact that I'm also so judgmental of fake-ish girls and the guys who like them.  Mostly stupid because I am seriously barely making ends meet and tanning is expensive.  OK but aside from all of the reasons it was stupid, I legitimately feel better about myself.  The weight loss has been slow and I'm trying to fade my hair enough to start going back to my natural blonde so being pale on top of these things just really made for feeling more unattractive then I've ever felt in my life.  A little color not only makes me actually look better, but the warmth of the bed for those 8 minutes took away some of the Seasonal Affective Disorder blues.  I'd been stressed and felt really down but I came back feeling like I made progress and then I weighed myself and FINALLY dropped a lb!  Relief!!!  I worked out a bit and took a nice shower.

Feeling clean, skinny and with a nicer skin tone, I set to making a beautiful low-carb dinner.  Didn't sit on my lazy ass to watch tv until about 10 p.m. and am now enjoying some American Idol... which always makes me wonder why I've never tried auditioning.  I mean, singing is my favorite thing in the world and my best de-stressor.  Could have been fun.  I know people who know one of tonight's contestants who makes it through so I guess that's pretty cool.  I'll probably finish up this show and head to sleep.  Two days until the weekend.  Let's hope the more positive mood can keep up a bit.

6:30 a.m. - Coffee and creamer

11:00 a.m. - Salad with spinach, romaine, rotisserie chicken pieces, raspberries, blueberries, blackberries, almonds, avocado and goat cheese crumbles and a side of raspberry vinaigrette.

3 p.m. - Cottage cheese

4 p.m. - whole grapefruit, which is evidently the world's most erotic fruit according to my hilarious co-teacher.

7 p.m. - a bit of peanut butter after working out to hold me over while cooking

8 p.m. - Pork in a cranberry dijon sauce (Dried cranberries, dijon, a drop of honey, Worcestire (sp?),  strawberry balasmic, drop of grapefruit juice, rosemary, thyme, sage (but no parsley... haha... get it?), and of course, pork browned in a tsp of butter)

Mashed Cauliflower "potatoes" - Best idea ever when on a low-carb diet or even just eating healthy in general.  Boil a cauliflower head in water until tender.  Throw it in a food processor with some Greek yogurt, a dash of olive oil, salt, pepper, and paprika.  Consistency is similar to mashed potatoes without all the calories.  Awesome side dish and super healthy.

Random side note - this new American Idol has made me really like Jennifer Lopez.  I think she's beautiful, sweet, and charming and am actually enjoying Idol sans Simon a lot more than I was anticipating.

In other news, I still have not put my laundry away.  It's on the futon in my music room, where I have to go every morning to get underwear.  Awesome.

Another Successful Carb-Free Day

It was a stressful day at work (shocking) and of course that means I came home and did very little.  I find it so hard to motivate after working non stop all day.  I don't understand how people do things like raise children with full time jobs.  I seriously don't think I can ever have kids unless I get to be a stay at home mom.  Can't even imagine coming home after an exhausting day at work and having to be mom instead of sitting on the couch or cooking a meal (whatever I want that is... not fish sticks).  That being said, I don't know how I'd come home to a man either.  If I end up alone forever, I doubt anyone will be all that surprised.  I do quite well by myself.  It will take quite an independent man to be my husband one day.  

Food: 

6:45 a.m. - Coffee and creamer 

11:00 a.m. - Turkey wrap on low-carb tortilla with swiss, lettuce, tomato and avocado

3:00 p.m. - cottage cheese and veggies with hummus and Laughing Cow Cheese (celery, cucumbers, cauliflower and tomatoes) 

6 p.m. - Peanut Butter 

8 p.m. - Chicken in a Jalefrez Curry Sauce *jar and veggies (rotisserie chicken, snow peas, green pepper, onion, water chestnut, broccoli, jalepeno)

10 p.m. - greek yogurt with raspberries, blackberries, blueberries, almonds and cinnamon

Forgetting Sarah Marshall... because she's the lesser of the two anyway

Well, made it through Monday.  And the good thing is, I actually only gained .6 lbs this crazy weekend.  Good feeling. It was day one of no carbs and I've been successful.  Let's see how long I can keep it up.  At least I have lunch ready for tomorrow because everyone knows I don't wake up early enough to take care of these things.

Work was alright.  Teaching the kids about Chicago history and introducing their topics for the research paper and surprisingly, I got very few whines about it.  They've just accepted that they have to deal with it and a few almost seem to like the idea of some of the topics.  I wish we would hire someone to replace my coteacher.  The students have nothing really productive to do so they just goof around, making me feel like I should do something about it but the truth is, I'm on my planning periods and would rather pretend I didn't have to be responsible for a bunch of students during that time.

Slightly warmer in my place which is nice.  The reason for my status was that after watching Sarah Marshall, I decided to make it clear that Mila Kunis is hotter than Kristen Bell.  My friend disagreed so I had to start polling people.  Mila won hands down.  Friend still disagrees.  That was pretty much the big thing of my night besides cooking dinner and finally finishing my laundry.  I folded it.. but didn't put it away.  It's still on the futon.

Food:

6:50 a.m. - Coffee and Creamer

11:00 a.m. - Steak Tips Portobello Lean Cuisine

3:00 p.m. - two hard boiled eggs and cottage cheese

5:30 p.m. - About 3 tablespoons of peanut butter. Maybe a little more.

7:30 p.m. - Leftover Coconut Tilapia with vegetables ( snow peas, asparagus, water cress, green pepper, onion, jalapeno, mushrooms, thai chili sauce, fresh grated parmseano reggiano)

Very sleepy and really have nothing interesting to talk about... now or ever evidently.  This blog is super boring and isn't even chronicling weight loss because I keep cheating.  Gah.

Grey. So Very Grey.

This weekend started out with good ideas and hope.  I already ate too much at school because though I brought a tuna sandwich and greek yogurt, the staff lounge was filled with absolutely amazing things thanks to the Honor Roll Breakfast and Planning Potluck.  I knew I was going to Tuscany so I figured I'd just make Friday a cheat day and get back on track Saturday , knowing that I'd be going no-carb on Monday.  I got home with the intention of working out or cleaning before hopping in the shower, but of course did neither.  It was about 10 degrees out and it turns out, the heat in my place is rather horrific.  The thermostat read 62.  Little did I know that no matter how high I turned the heat up, this would not raise until the outside temperature did today, Monday.  Because it was so cold, I sat myself in a blanket for an hour and then got ready for Tuscany. 

On my way with Michelle, I got rear-ended on 90/94 as a perfect continuation of my crappy car week.  It was so cold and we were already so late for dinner that I was extra frustrated.  My car is a beast and bore not a single scratch while the poor individual who ran into me had much damage on his own part.  He was rather angry and I felt bad because though he was obviously following too closely, I did hit my breaks rather hard.  Michelle and I had to wait about an hour and a half at Tuscany, which was all the same since we'd have just sat there forever anyway.  We enjoyed a beautiful dinner and when I got back at 11:30, I just went straight to bed. 

Food:

6:45 a.m. - coffee and creamer
11:00 a.m. - Greek Yogurt
11:30 a.m. - piece of butter cake and a piece of banana bread
1:00 p.m. - tuna sandwich, a bit of fried rice
3 p.m. - brownie
9 p.m. - lots of bread and olive oil
10 p.m. - Butternut Squash Ravioli in brown butter sage..... so worth it
Also - two martinis and a glass of wine


Saturday - I woke up late and was so cold all day I could barely function.  Due to the snow tracks and disaster that is my floor, I realized I seriously needed to clean.  I put on some warm clothes and cleaned the place up but my toes were so cold I couldn't feel them even wearing two pair of fuzzy socks and Uggs.  I realized that my vents were only blowing out or up which is a huge problem when you live on the first floor and your vents are at the top of the walls.  Good to know that if I cared to sit on a ladder on the top two feet of my place that I might experience some heat.  I unscrewed all of them and flipped them upside down trying to get them to aim some of the heat down.  A while after switching and angling one of them, it fell down, shattering two martini glasses that left shards of glass from one end of my just-cleaned condo to the other.  One of them was a really awesome Pottery Barn martini glass that was jet black with a light grey skull on the inside and I don't think it can be replaced.  The other was from World Market and wasn't quite as nice or unique but disappointing nonetheless, not to mention the fact that there is probably still glass because it's almost impossible to know you got it all when something shatters from one end of the room to the other like that.  I was supposed to go out but it got to the point where I was so cold that I couldn't face the thought of getting ready and going outside and spending money on a cab or waiting in the cold for the el so I stayed on my couch all day after cleaning, not even finishing the laundry I started.  There is still wet laundry in the washer.  Not the most productive or glorious of days.

Food:

12:30 p.m. - coffee and creamer
1:30 p.m. - Grilled cheese.  I used one of those sandwich thins, a slice of Kraft American, some goat cheese, Parmesan, tomato and sauteed onion.  Delicious.
7 p.m. - Indian food - Chicken Tikki Masala with Paneer cheese.  Probably wouldn't have been too terrible if not for the rice and naan.  Like I said, this weekend was a waste of my life in many ways.  I was way too cold to work out, though if I would have, it might have created some heat at least.

Brings me to Sunday.  Super super depressing Sunday.  Woke up and grocery shopped to get a bunch of carb-free food to fill myself on this week.  Swoowsk met up with me and we met a bunch of friends at Vines to watch the Bears-Packers NFC champsionship.  The loss was heart-wrenching and I continued to stay out drinking pretty much all day and night, resulting in today's headache.  In addition to the devastating loss of the Bears, I felt very confronted with the bleakness that is the next few months.  It's cold and grey, just a lot of lame work, I'm bored and lonely.  I really just want to meet someone I have fun with who appreciates me and is not selfish but thinking about yesterday's conversations all day, sometimes I wonder if there is a such thing as a man who is not selfish.  In any case, I am really sick of being second place or worse in everything and that's very much how I feel right now.  I want a man who sees me as his number one, not just the best available option at that very moment or at that particular time, which is all I've been to any man I've so much as glanced at in the last three years.  It's more than old.  In other news, I found a beautiful wedding dress thanks to Michelle introducing me to the best site ever. 

I also am realizing just how very poor I am and am currently wondering how I will even get through the next few weeks on my unbelievably limited funds and the knowledge that I have to pay a mortgage, bills, and my credit card.... the thought makes me sick because I'm pretty sure it's going to be impossible and I don't even buy things.

Food for Sunday:

9:30 a.m. - Coffee and oatmeal with brown sugar and cinnamon

1 p.m. - Flat bread artichoke and goat cheese pizza

9 p.m - Frozen Yogurt with pomegranate, graham cracker and coconut

10:30 p.m. - burrito.  Yes, I really did this after having the frozen yogurt.  I am ridiculous and destined to be fat my entire life.

In other news, I watched a ton of totally pointless movies all weekend.  Seriously need to get myself together.

Chicago History and stuff

Today my lessons went very well.  Our research paper is going to be centered around Devil in the White City and they will be selecting Chicago History topics on Innovation and Progress for their papers.  I introduced the Columbian Exposition and some key Chicago facts that they seemed to actually connect to and find interest in.  Overall, the day was not bad and my students were pretty on task. 

At the end of the day, as I was just making copies and planning to get out of the building reletively early, my computer caught a heinus virus and wouldn't do anything.  Anyone who knows me understands the general hysteria which any technology mishap causes in my life so it was not a pleasant next hour.  Our amazing substitite was able to restore the computer and it is working fine again with minimal lost files.  After all of this, I was very ready to get home and watch tv.  I'm always very disappointed on Thursdays when there is no Grey's Anatomy.  There will only be another episode or two which makes me sad and I have no other show like it until Friday Night Lights comes back on in the summer.  Gotta get my drama fix!

11:00 a.m. - Turkey Sandwich with turkey, avocado, swiss, light mayo, tomato and a sandwich thin

11:15 a.m. - Greek Yogurt with Cherry

3:30 p.m. - Honey Crisp Apple

5:30 p.m. - Fiber Bar

7:30 p.m. - Coconut Crusted Tilapia (no, I did not make this.  I bought it at Jewel).  Vegetables (snow peas, green pepper, onion, mushroom, jalapeno, garlic in thai garlic chili sauce).


Pretty healthy day overall although I'm still not losing weight.  It's rather discouraging so starting Monday I'm going to go no carbs for two weeks to see if I can jumpstart the weight loss so I can work on maintaining rather than losing closer to Vegas.  That is what my mom is doing anyway.
